The 'Cabaletta' is from the province of Verona in Italy and is made partly in the appassimento style. Appassimento is a Venetian tradition of partially drying harvested grapes on straw mats for a more concentrated, richer style of wine. The best known example of this wine-style is Amarone.
In this instance 30% of the grapes were dried, with the remainder vinified normally. This gives the Cabaletta a rich and plush style, whilst maintaining freshness. The blend of Corvina, Rondinella and Cabernet Sauvignon was partially aged in American and French oak barriques, adding a touch of vanilla and toasted spices to fruit notes of prunes, cherries and redcurrant.
