Sake literally translated means 'alcoholic beverage'. However there is much more to it than that. The Akashi-Tai Sake Brewery was founded in 1886 and combines a traditional hand-crafted approach with an innovative flare to produce some truly exceptional sakes. The Genshu Honjozo is a satisfying full-bodied sake with a fluttering silky texture. As a genshu, it is not diluted with water after being brewed - as such, this is perhaps the most direct way to savour the full palate of Akashi-Tai sake. On the nose it is waxy, woody and of white flowers with a pink grapefruit finish. To taste it starts strong but is surprisingly creamy on the palate, with a very rich and long finish. Serve it at room temperature or over ice in a tumbler glass with mushroom, ankimo (monk fish liver) or pâté.more ↓ less ↑
