Located between the Pyrenees and the Mediterranean, in Rivesaltes, in the heart of the Roussillon, Cazes was created in 1895 by Michel Cazes. Like most of the Rivesaltes farmers of his generation, he practised viticulture in order to sell grapes to local winemaking merchants. Down the years, the property grew, via the acquisition of neighbouring parcels of land; by the 1950s, its extent had reached an impressive 40 hectares. Whilst remaining vigilant on the excellence of its wines produced from low yielding vines, Cazes proposes a wide range of wines from fabulous Catalan soils which extend over 220 hectares, entirely converted to organic and bio-dynamic culture. Three different processes are used for this wine. Some of the grapes are pressed and the juice starts fermenting as soon as it has been racked. Others, whole grapes, are macerated for 24 hours at low temperatures after which they are pressed and racked before fermentation gets under way. Fermentation is temperature controlled at 20°C. and is stopped during its solid phase by adding neutral alcohol. In both cases, the temperature is maintained at 18°C. The wine is then blended when all these processes are completed. When young, Muscat de Rivesaltes is best drunk cool at 8°C, to appreciate the full palette of aromas : a bouquet of citrus and exotic fruit, peaches and apricots. Delicious with desserts made with white fruit and vanilla. Laid down for ten years or so, the aromas metamorphose into candied fruit and oriental spices.more ↓ less ↑
